I love BBQ whether it's Texas dry style or North Carolina sweet and spicy style. A great way to make your own homemade barbecue sauce is with honey and ketchup or tomato sauce then you can add red pepper and cayenne pepper or Cajun seasoning and stuff like that.

I soak in water , overnight. a cedar piece fencing I buy at Home Depot.

I then slow cook an amazing Salmon filet on the cedar. Perfection!!!

I've done that with salmon on a cedar plank sometimes wrapped in a palm leaf also something I learned in New Orleans that's really great is en pappillote. Where you put the fish along with vegetables and herbs in a wax paper envelope and bake it... it comes out steamed and it's just so tender really amazing

I need to hang with you guys.  Pick up some smoking knowledge.  All I got is a Weber Genesis II propane grill. Don’t smoke stuff, but grill the heck out of steaks, burgers, Baby back ribs, kabobs, brats, etc.

Don't let that stop you from smoking........get a smoker box or tube. Move your meat to an unlit side of the grill and smoke it low and slow.....
